6-8 fresh pears (I like a mix of different kinds
for added texture, juiciness and flavour) DO NOT
PAR COOK
 
3 tbsp organic sugar or honey
Cardamom – YUM!!!
Apricot etc preserves
One egg – add a touch of water and beat
like you’re scrambling an egg
 
Roll out TWO puff pastry sheets and place one as
As bottom in a 9X9 greased pan
 
spread almond paste and place random dollops of apricot,
apricot & pear or apricot and ginger preserves around the top of the
apricot filling…. Mix pears, sugar and cardamom and place in
the puff pastry lined pan and place the second puff pastry
it on top. You can add decorations or simply pierce the top shell.
Brush egg mixture all over the top
 
Bake 385 for 25 minutes then bake 5-10 additional minutes
At 425. You’ll know when it’s done – crust will be golden brown.
Make sure the center of the crust is also brown!

  1. We would normally invite people over for a delicious meal, and then this heavenly pear delight for desert, but with Covid….it’s just the two of us..well, mainly me who gets to eat it all!
